Veg Dum Biryani Recipe

1. For rice boiling:


Ingredients:
Rice- 1.5 glass (in which you drink milk)
Water- 8 glass
Cardamom- 2
Bay leaf- 2
Cloves- 5-6
Cinnamon- 3
Black pepper- 5-6
Process:
Add all the whole spices mentioned above in water and let it boil completely. Then add the rice in it and little bit of salt. Cook the rice 80℅ only. I think it won’t take more than 6-9 minutes. And strain it under normal water to stop overcooking. Keep it aside now. Make sure the rice is not fully cooked, just 80℅.

2. Onion frying:


Take 2-3 medium size onion and slice it as mom does in vegetables, vertically and thin slices. Then take enough oil to deep fry it on low flame till it turns crispy. Make sure it doesn’t burn or turns black. It should be brown and crispy. Then strain oil from it with help of a frying spoon.

3. Vegetable preparation:


Ingredients:
Whatever vegetable you want to put is upto you. You can add potato (cut in cubes like in vegetable), cauliflower, carrot, beans etc.
Onion- 3 (medium size)- finely chopped
Ginger- garlic paste – 1 tbsp
Coriander leaves
Mint leaves
Cloves- 5-6
Cardamon- 2-3
Bay leaf- 1-2
Cinnamon- 3-4
Cumin- 1 tsp
Turmeric powder
Salt
Chilli powder
Coriander powder
Curd- 4-5 tbsp (adjust according to vegetable)
Biryani masala- 2-3 spoon

Process:


Heat a pan, add oil and whole spices mentioned above. Once they begin to crackle, add onion and fry it for a min on low flame. Then add the ginger garlic paste in it and cook it for some time. Then add the vegetables and saute for few minutes and then add curd in it. Give it a mix and add salt, turmeric powder, chilli powder, coriander powder, biryani masala and mix them together and fry for few minutes. Then add some coriander and mint leaves in it and water as per the need, not much. Cover it and let it be cooked for 12-15 minutes. Again don’t let the veggies overcook.

4. Layering and stewing:


Knead some wheat dough for sealing the vessel.
Take a vessel which has its cover so that you can seal it with dough from its edges.
Now put a layer of vegetable and cover it with a layer of rice. Spread some biryani masala, the crispy fried onions, a tsp of ghee, some coriander and mint leaves on it, repeat the process with another layer of vegetable and rice and spread the masala and other things in the same way.
Now cover it and seal its edges from all sides with dough.
Now put a tawa on high flame and the vessel over the tawa. Wait for exact 30 sec and turn the flame low. Leave it for 15 minutes on low flame over tawa. Post-15mins, turn off the flame, remove the dough and use a thin spatula to mix the biryani so that the rice doesn’t get broken.
